Ingredients:
- 1 1/2 cups flour (sifted is best, can use a combination of white and wheat flours, if desired)
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 3 teaspoons double-acting baking powder
- 2 large eggs, separated (Separate egg yolks and whites in two bowls)
- 1/2 cube of butter (1/4 cup) or vegetable oil of your choice
- 2 cups milk (can use a mixture of fresh and powdered milk)
Directions:
1. Measure and prepare ingredients. Read waffle irons instructions carefully.
2. Set waffle maker on a safe place, making sure cord is not hanging out. Preheat waffle maker following manufacturer’s instructions.
3. In a large mixing bowl, sift together dry ingredients.
4. In another bowl, beat together egg yolks, butter and milk. Gently pour this mixture into dry mixture
5. In a small bowl, beat the two egg whites until stiff and gently fold into batter.
6. Measure about 1/2 cup of the batter for each waffle, pour into the center of bottom layer in preheated waffle maker. Spread batter nicely and leave an inch towards the edge before covering waffle maker.
7. Cook waffles, following manufacturer’s instructions.
8. Wait until waffles are done as indicated by indicator lights or timer on your waffle maker. Carefully open the lid and remove waffles using a single chopstick.
9. Serve as one huge segmented waffle or break into four servings.
10. Close lid while serving. After one minute, waffle maker will be hot enough for another batch of waffles.

· 8 frozen toaster waffles (plain or whole grain), unthawed
· 1 tbsp. Dijon mustard (optional)
· 1/2 lb. sliced deli ham
· 1/2 lb. cheddar, thinly sliced
· 4 tbsp. unsalted butter
· 8 bacon strips, cooked and drained
Preparation:
Take out 4 of the homemade waffles from the previous recipe. Place in a large plate or on a work surface. Slather nicely with mustard, if desired.
Arrange ham, bacon strip, and cheddar cheese on top of each waffle, and then place remaining waffles like sandwiches. Slather the top of each waffle sandwich with 1/2 tablespoon of the butter.
In a large non-stick skillet set over medium heat, stir in remaining butter until melted.
Place the sandwiches in the skillet with their buttered-side up. Cook waffle sandwiches for 3 -4 minutes per side, pressing them with the back of a spatula and turning occasionally. Cook until cheddar cheese melts and waffles start to appear golden.
